  • 1/31/2 cup chopped pecans
  • 1 1/4 cups white chocolate chips
  • 1/2 tbsp coconut oil (optional, but helps thin it a bit!)

After the 5 minutes, reduce the heat to low and cook another 2-3 minutes. The caramel should have reduced and be somewhat thick. Remove from heat and stir in the pecans. Allow to cool (It’ll thicken a little as it cools).
  3. Once cooled, add some to the center of each cookie. Then place the baking sheet in the freezer for an hour or so until the caramel is firm to touch. This is important to make sure it doesn’t melt into the chocolate when we dunk them!
