Delicious loaded baked potatoes topped with sirloin steak, cheddar cheese, sour cream, and chives.

- 2 medium Russet potatoes
- 8 oz sirloin steak, cut into bite-sized pieces
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 2 tbsp chopped chives or green onions
Instructions
- Preheat your oven to 425°F (220°C).
- Scrub the russet potatoes clean.
- Prick each potato several times with a fork, rub with olive oil, sprinkle with salt, and place directly on the oven rack. Bake for 45-60 minutes until tender.
- While potatoes bake, heat olive oil in a skillet over medium-high heat. Season steak bites with salt and pepper, then sear for about 5-7 minutes until cooked to your liking.
- When potatoes are done, slice open lengthwise and fluff the insides with a fork. Layer on cheddar cheese and steak bites.
- Top each potato with sour cream and sprinkle with chives or green onions before serving.
Notes
- For extra flavor, you can add more spices to the steak.
- Feel free to substitute the steak with chicken or a vegetarian option.
