Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Squash: Wash and dry the yellow squashes. Slice them into evenly thick rounds for uniform cooking.
  3. Cook Onions and Garlic: In a pan, heat olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until they are soft and translucent.
  4. Assemble the Casserole: In a large bowl, combine the sliced squash, sautéed onions and garlic, salt, pepper, milk, and half of the cheddar cheese. Mix well to ensure even distribution.
  5. Layer the Casserole: Grease a baking dish with olive oil or butter. Spread the squash mixture evenly in the dish. Sprinkle the remaining cheddar cheese and Parmesan cheese over the top.
  6. Add the Topping: Mix the breadcrumbs with melted butter. Evenly sprinkle the breadcrumb mixture over the cheese layer.
  7. Bake: Place the casserole in the preheated oven. Bake for 25–30 minutes, or until the top is golden brown and crispy.
