This delightful Brazilian cheese bread, also known as Pão de Queijo, is chewy and cheesy, perfect for any occasion.

- 2 cups tapioca flour
- 1 cup whole milk
- 1/2 cup olive oil or vegetable oil
- 1 teaspoon salt
- 2 large eggs
- 1 cup grated Parmesan cheese
- 1 cup grated mozzarella cheese
- butter (for greasing)
- dulce de leche or caramel sauce (optional for serving)
Instructions
- Preheat & Prepare:
- Preheat the oven to 375°F (190°C).
- Grease a mini muffin tin or baking sheet with butter.
- Heat Liquid Ingredients:
- In a saucepan, combine whole milk, olive oil, and salt.
- Heat the mixture over medium heat until it just begins to boil.
- Mix Tapioca Flour:
- Pour the hot liquid mixture over the tapioca flour in a large mixing bowl. Stir well until the mixture is smooth and cool enough to handle.
- Add Eggs:
- Add eggs one at a time, mixing well after each addition until the dough is smooth.
- Incorporate Cheese:
- Fold in the grated Parmesan and mozzarella cheese. Mix until evenly distributed.
- Shape Dough:
- Using your hands or a scoop, shape the dough into small balls, about 1-inch in diameter. Place them on the prepared baking sheet or muffin tin.
- Bake:
- Bake in the preheated oven for 15-20 minutes until they are puffed and golden.
- Serve:
- Allow to cool slightly, then serve warm. Optionally, slice open and fill with dulce de leche or caramel sauce.
Notes
- If the dough is too sticky, lightly oil your hands to make shaping easier.
- Experiment with different cheese blends to customize the flavor.
- Pão de queijo is best enjoyed fresh out of the oven but can be reheated in a toaster oven for a few minutes.
- These can be frozen after shaping. To bake from frozen, extend the baking time by a few minutes.
