Description

This delightful Brazilian cheese bread, also known as Pão de Queijo, is chewy and cheesy, perfect for any occasion.


Ingredients

  • 2 cups tapioca flour
  • 1 cup whole milk
  • 1/2 cup olive oil or vegetable oil
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1 cup grated mozzarella cheese
  • butter (for greasing)
  • dulce de leche or caramel sauce (optional for serving)

Instructions

  1. Preheat & Prepare:
    • Preheat the oven to 375°F (190°C).
    • Grease a mini muffin tin or baking sheet with butter.
  2. Heat Liquid Ingredients:
    • In a saucepan, combine whole milk, olive oil, and salt.
    • Heat the mixture over medium heat until it just begins to boil.
  3. Mix Tapioca Flour:
    • Pour the hot liquid mixture over the tapioca flour in a large mixing bowl. Stir well until the mixture is smooth and cool enough to handle.
  4. Add Eggs:
    • Add eggs one at a time, mixing well after each addition until the dough is smooth.
  5. Incorporate Cheese:
    • Fold in the grated Parmesan and mozzarella cheese. Mix until evenly distributed.
  6. Shape Dough:
    • Using your hands or a scoop, shape the dough into small balls, about 1-inch in diameter. Place them on the prepared baking sheet or muffin tin.
  7. Bake:
    • Bake in the preheated oven for 15-20 minutes until they are puffed and golden.
  8. Serve:
    • Allow to cool slightly, then serve warm. Optionally, slice open and fill with dulce de leche or caramel sauce.

Notes

  • If the dough is too sticky, lightly oil your hands to make shaping easier.
  • Experiment with different cheese blends to customize the flavor.
  • Pão de queijo is best enjoyed fresh out of the oven but can be reheated in a toaster oven for a few minutes.
  • These can be frozen after shaping. To bake from frozen, extend the baking time by a few minutes.
