Creamy Spinach Sauce

Description

A rich and creamy spinach sauce perfect for pasta or as a side dish.


Ingredients

Scale
  • 5 tablespoons butter unsalted or salted
  • 2 shallots finely chopped
  • 2 cloves garlic minced
  • 16 ounces baby spinach
  • 3 tablespoons all purpose flour
  • 1 1/4 cups milk whole or 2%
  • 1/4 teaspoon nutmeg
  • 3 tablespoons heavy cream
  • salt and freshly ground black pepper to taste

Instructions

  1. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the shallot and saute until soft, about 5 minutes.
  2. Reduce the heat to low and add the garlic and spinach. Cook for 1-2 minutes or until the spinach is wilted, stirring several times.
  3. Meanwhile, melt the remaining butter in a separate large skillet over medium heat. Sprinkle in the flour and whisk to combine. Cook for 2-3 minutes while whisking.
  4. Slowly add the milk while whisking and continue cooking until thickened. Stir in the sauteed spinach mixture, nutmeg, and heavy cream. Season with salt and freshly ground pepper to taste.

Notes

  • This sauce can be served over pasta or used as a filling for crepes.
