- 24 oz cream cheese, softened
- 2 cups fresh blackberries
- 1 1/2 cups graham cracker crumbs
- 1 cup granulated sugar
- 1/3 cup melted butter
- 1 tsp vanilla extract

- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 2 tbsp water
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C).
- Prepare the Crust: In a medium bowl, combine graham cracker crumbs, 1/4 cup of sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes. Remove from oven and let it cool.
- Prepare the Blackberry Puree: In a small saucepan, combine blackberries, 1/4 cup sugar, lemon juice, and cornstarch mixed with water. Cook over medium heat until thickened, stirring frequently. Remove from heat and let cool.
- Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and remaining sugar until smooth. Add eggs, one at a time, beating well after each addition. Stir in sour cream and vanilla extract.
- Assemble the Cheesecake: Pour half of the cheesecake filling over the crust in the springform pan. Spoon half of the cooled blackberry mixture over the filling. Pour the remaining cheesecake filling on top, followed by the rest of the blackberry mixture. Use a knife to gently swirl the blackberry topping into the cheesecake to create a marbled effect.
- Bake the Cheesecake: Place the springform pan in the oven and bake for 60 minutes or until the center is set. Turn off the oven and crack the oven door, allowing the cheesecake to cool slowly for about an hour. Refrigerate for at least 4 hours, preferably overnight.
