- 4 boneless, skinless chicken breasts
- 8 oz fresh mushrooms (button or cremini), sliced
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare your ingredients by chopping the mushrooms and mincing the garlic.
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides (about 5 minutes per side). Remove from skillet.
- In the same skillet, add garlic and mushrooms; sauté until fragrant and soft (about 5 minutes).
- Pour in chicken broth and heavy cream; stir well while scraping the bottom of the pan. Let simmer for about three minutes until slightly thickened.
- Return chicken to the skillet, sprinkle with thyme, cover, and reduce heat to low. Simmer until chicken reaches an internal temperature of at least 165°F (75°C), about ten more minutes.
- Serve immediately over rice or pasta with extra sauce drizzled on top.
