A delicious and creamy Cajun chicken orzo recipe that’s perfect for a comforting meal.

- 1 lb boneless skinless chicken breasts (diced)
- 1 tbsp Cajun seasoning (adjust to taste)
- 1 tbsp olive oil (for sautéing)
- 1 cup diced onions (yellow or white)
- 2 cloves garlic (minced)
- 1 cup diced bell pepper (optional)
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- salt (to taste)
- pepper (to taste)
- fresh parsley (for garnish, optional)
Instructions
- Warm the olive oil in a large pot over medium heat until it shimmers.
- Add the diced chicken and sprinkle with Cajun seasoning and salt. Stir for about 5-7 minutes until the chicken is golden and cooked through.
- Take the chicken out of the pot and set it aside.
- In the same pot, toss in the diced onions and minced garlic. Cook for 2-3 minutes until they become soft and fragrant.
- If using bell pepper, toss it in and sauté for an additional 2 minutes.
- Stir in the orzo pasta, chicken broth, and heavy cream. Bring everything to a boil.
- Reduce the heat to low, letting it simmer for 10-12 minutes until the orzo is tender and creamy.
- Fold the cooked chicken and grated Parmesan into the pot and stir until everything is combined.
- Serve warm, garnished with fresh parsley.
Notes
- Adjust the Cajun seasoning to control the spice level.
- For a lighter version, use half and half instead of heavy cream.
