Ingredients

  • 1 lb boneless skinless chicken breasts (diced)
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tbsp olive oil (for sautéing)
  • 1 cup diced onions (yellow or white)
  • 2 cloves garlic (minced)
  • 1 cup diced bell pepper (optional)
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • salt (to taste)
  • pepper (to taste)
  • fresh parsley (for garnish, optional)

Instructions

  1. Warm the olive oil in a large pot over medium heat until it shimmers.
  2. Add the diced chicken and sprinkle with Cajun seasoning and salt. Stir for about 5-7 minutes until the chicken is golden and cooked through.
  3. Take the chicken out of the pot and set it aside.
  4. In the same pot, toss in the diced onions and minced garlic. Cook for 2-3 minutes until they become soft and fragrant.
  5. If using bell pepper, toss it in and sauté for an additional 2 minutes.
  6. Stir in the orzo pasta, chicken broth, and heavy cream. Bring everything to a boil.
  7. Reduce the heat to low, letting it simmer for 10-12 minutes until the orzo is tender and creamy.
  8. Fold the cooked chicken and grated Parmesan into the pot and stir until everything is combined.
  9. Serve warm, garnished with fresh parsley.
