Description
A creamy and rich steak fettuccine Alfredo recipe that’s perfect for a quick dinner.
Ingredients
Scale
- 12 oz. fettuccine pasta
- 1 lb. steak (such as ribeye or sirloin)
- Salt and black pepper (to taste)
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 ½ cups heavy cream
- 1 cup grated Parmesan cheese
- Fresh parsley or chives, chopped (for garnish)
- Additional salt and black pepper (to taste)
Instructions
- Cook the Pasta:
- In a large pot, bring salted water to a boil.
- Add the fettuccine pasta and cook according to package instructions until al dente.
- Reserve 1 cup of pasta water and drain the rest.
- Prepare the Steak:
- Season the steak with salt and black pepper on both sides.
- Heat olive oil in a skillet over medium-high heat.
- Sear the steak for about 3-4 minutes on each side, depending on thickness and desired doneness.
- Remove the steak from the skillet and let it rest for 5 minutes before slicing it thinly against the grain.
- Make the Alfredo Sauce:
- In the same skillet, add butter and let it melt.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring it to a gentle simmer.
- Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy.
- If the sauce is too thick, add some reserved pasta water until desired consistency is reached.
- Season with additional salt and black pepper to taste.
- Combine Everything:
- Add the cooked fettuccine to the skillet with the Alfredo sauce and toss to coat the pasta evenly.
- Arrange the sliced steak on top of the pasta.
- Serve:
- Garnish with fresh parsley or chives.
- Serve immediately for the best taste.
Notes
- For a richer flavor, you can add a splash of white wine to the sauce after sautéing the garlic.
- Use freshly grated Parmesan cheese for optimal texture and flavor.
- Adjust the seasoning according to your taste. Adding more cheese will also thicken the sauce if needed.
- Letting the steak rest before slicing ensures juiciness.
