Ingredients

  • 1 package small flour or corn tortillas
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup finely chopped onions
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola)

Instructions

  1. Prepare the Filling: In a large bowl, combine shredded chicken, cheese, chopped onions, cilantro, sour cream, lime juice, garlic powder, chili powder, salt, and pepper. Mix well.
  2. Assemble Taquitos: Warm the tortillas in the microwave for about 20 seconds to make them pliable. Place 2-3 tablespoons of the chicken mixture on one side of each tortilla. Roll the tortilla tightly around the filling and secure with a toothpick if necessary.
  3. Fry the Taquitos: Heat oil in a large skillet over medium heat. Once the oil is hot, carefully place the taquitos seam side down in the oil. Fry them for 2-3 minutes on each side or until golden brown and crispy. Remove from oil and drain on paper towels.
  4. Serve: Remove toothpicks if used. Serve warm with salsa, guacamole, and extra sour cream for dipping.
