Description
Delicious and crispy homemade chicken taquitos made with shredded chicken, cheese, and spices.
Ingredients
Scale
- 2 cups cooked, shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 package small flour or corn tortillas
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1/4 cup finely chopped onions
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- Oil for frying (vegetable or canola)
Instructions
- Prepare the Filling: In a large bowl, combine shredded chicken, cheese, chopped onions, cilantro, sour cream, lime juice, garlic powder, chili powder, salt, and pepper. Mix well.
- Assemble Taquitos: Warm the tortillas in the microwave for about 20 seconds to make them pliable. Place 2-3 tablespoons of the chicken mixture on one side of each tortilla. Roll the tortilla tightly around the filling and secure with a toothpick if necessary.
- Fry the Taquitos: Heat oil in a large skillet over medium heat. Once the oil is hot, carefully place the taquitos seam side down in the oil. Fry them for 2-3 minutes on each side or until golden brown and crispy. Remove from oil and drain on paper towels.
- Serve: Remove toothpicks if used. Serve warm with salsa, guacamole, and extra sour cream for dipping.
Notes
- For a healthier option, you can bake the taquitos at 400°F (200°C) for 15-20 minutes until crispy.
- Feel free to add or substitute ingredients like black beans or corn for extra flavor and texture.
- For extra crispiness, consider brushing the taquitos with oil or spraying with cooking spray before baking.
- Make sure not to overfill the tortillas as this can make them difficult to roll and keep sealed during cooking.
