- 2 cups sharp cheddar cheese, shredded
- 28-ounce can diced tomatoes
- 15-ounce can kidney beans, rinsed and drained
- 2 tablespoons chili powder

- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 2 pounds frozen French fries
- 1/2 cup sour cream (optional)
- 2 tablespoons chopped green onions (optional)
- 1 jalapeño, sliced (optional)
Instructions
- Prepare the Fries: Preheat your oven to 425°F (220°C). Spread the frozen French fries on a baking sheet in a single layer. Bake for 25-30 minutes, or until golden and crispy. Flip halfway through for even cooking.
- Cook the Chili: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat. Stir in chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the diced tomatoes and kidney beans. Simmer for 15 minutes, stirring occasionally.
- Assemble the Platter: Place the cooked fries on a large serving platter. Pour the chili evenly over the fries. Sprinkle the shredded cheddar cheese on top of the chili. Place the platter in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish: Remove from the oven and let cool slightly. Optional: Add sour cream, chopped green onions, and sliced jalapeños as garnish.

- For extra heat, add a pinch of cayenne pepper to the chili.
- Use a blend of cheeses, such as Monterey Jack and cheddar, for extra flavor.
- Consider using sweet potato fries for a different twist.
