Instructions
- Boil potatoes in salted water for 15-20 minutes until fork-tender. Drain.
- Preheat oven to 425°F (220°C). Smash each potato gently on a lined baking sheet.
- Drizzle with olive oil and season with garlic powder, salt, and pepper.
- Roast for 25-30 minutes until golden brown and crispy.
- While potatoes roast, whisk together mayonnaise, vinegar, red onion, and herbs in a bowl.
- Combine roasted potatoes with dressing and serve warm or at room temperature.

- For a healthier option, you can substitute mayonnaise with Greek yogurt.
