A delicious and healthy chicken salad made with honey, Dijon mustard, and fresh veggies.
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1/4 cup raw honey
- 2 tbsp Dijon mustard
- 1/2 cup Greek yogurt
- 2 cups fresh veggies (bell peppers, celery, or apples), chopped
- Salt and pepper to taste
- Juice of 1 lemon (about 2 tbsp)
- 2 tbsp olive oil
Instructions
- Cook the Chicken: Preheat your grill or skillet over medium heat. Season chicken breasts with salt and pepper and cook for about 6-7 minutes per side until golden brown and cooked through.
- Prepare the Dressing: In a bowl, whisk together honey, Dijon mustard, Greek yogurt, lemon juice, olive oil, salt, and pepper until creamy.
- Chop the Veggies: While the chicken cools down, dice your fresh veggies.
- Combine Ingredients: Chop the cooled chicken into bite-sized pieces and toss it in a large bowl with the veggies. Drizzle on the dressing and mix gently.
- Serve: Plate your salad over greens or in wraps as desired.
Notes
- For additional flavor, let the chicken marinate in the dressing for 30 minutes before cooking.
- Serve with pita bread or over a bed of greens for a complete meal.
