Scale
- 2 boneless, skinless chicken breasts
- to taste salt
- to taste pepper
- 1 tablespoon olive oil
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1/2 teaspoon nutmeg
- 1 cup sliced mushrooms

Instructions

- Make the Creamy Spinach: In a large pan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in the sliced mushrooms and cook for about 5 minutes until golden brown. Add fresh spinach and cook until wilted. Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese and nutmeg, mixing until the sauce thickens.
- Combine and Serve: Place grilled chicken breasts on a serving plate. Top each with creamy spinach sauce. Sprinkle crumbled bacon over the top for garnish.
Notes
- Ensure the chicken is at room temperature before grilling for even cooking.
- You can use a meat thermometer to check chicken doneness; it should read 165°F.
- For extra flavor, marinate the chicken with lemon juice and herbs for 30 minutes before grilling.
- If cream sauce thickens too much, adjust with a splash of milk to reach desired consistency.
