Ingredients

  • 2 large sweet onions
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 1/4 cups club soda or beer
  • Vegetable or canola oil, for frying

Instructions

  1. Peel and slice onions into 1/2-inch thick rings; separate the rings.
  2. In one bowl, whisk together flour, cornstarch, baking powder, salt, pepper, garlic powder, and paprika.
  3. Gradually whisk in club soda (or beer) until smooth.
  4. Heat 2 inches of oil in a pot to 350°F (175°C).
  5. Dust onion rings with plain flour.
  6. Dip rings into the batter, letting excess drip off.
  7. Fry in small batches, 2–3 minutes per side, until golden and crispy.
  8. Remove with slotted spoon and drain on paper towels or a wire rack.
  9. Serve hot with your favorite dipping sauce.

Notes

  • For an extra kick, try adding cayenne pepper to the batter.
  • Make sure the oil is hot enough before frying to ensure crispy rings.
