- 2 large sweet onions
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 1/4 cups club soda or beer
- Vegetable or canola oil, for frying
Instructions
- Peel and slice onions into 1/2-inch thick rings; separate the rings.
- In one bowl, whisk together flour, cornstarch, baking powder, salt, pepper, garlic powder, and paprika.
- Gradually whisk in club soda (or beer) until smooth.
- Heat 2 inches of oil in a pot to 350°F (175°C).
- Dust onion rings with plain flour.
- Dip rings into the batter, letting excess drip off.
- Fry in small batches, 2–3 minutes per side, until golden and crispy.
- Remove with slotted spoon and drain on paper towels or a wire rack.
- Serve hot with your favorite dipping sauce.
Notes
- For an extra kick, try adding cayenne pepper to the batter.
- Make sure the oil is hot enough before frying to ensure crispy rings.
