Description
A delicious upside down cake featuring ripe pears and a fluffy batter.
Ingredients

- 3 ripe pears (Bartlett or Bosc)
- 1 cup light brown sugar
- 1/2 cup unsalted butter (1 stick)
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 3 large eggs (room temperature)
- 1 tsp vanilla extract
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C) and grease a round cake pan thoroughly.
- In a skillet over medium heat, melt 1/2 cup of butter with brown sugar until bubbly. Arrange halved pears cut-side down in the pan.
- In a mixing bowl, cream together the remaining softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In another bowl, whisk together flour and baking powder. Gradually add this to wet ingredients, alternating with milk, mixing until just combined.
- Pour batter over the pears in the pan and spread evenly. Bake for 35-40 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before flipping onto a plate.
Notes
- This cake is best served warm.
- Leftovers can be stored in an airtight container for up to three days.
