Description

A delicious upside down cake featuring ripe pears and a fluffy batter.


Ingredients

  • 3 ripe pears (Bartlett or Bosc)
  • 1 cup light brown sugar
  • 1/2 cup unsalted butter (1 stick)
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan thoroughly.
  2. In a skillet over medium heat, melt 1/2 cup of butter with brown sugar until bubbly. Arrange halved pears cut-side down in the pan.
  3. In a mixing bowl, cream together the remaining softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In another bowl, whisk together flour and baking powder. Gradually add this to wet ingredients, alternating with milk, mixing until just combined.
  5. Pour batter over the pears in the pan and spread evenly. Bake for 35-40 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before flipping onto a plate.
