Description
Delicious and creamy zucchini tart topped with a flaky puff pastry crust.
Ingredients

- 1 sheet puff pastry (thawed)
- 2 medium zucchinis (sliced thinly)
- 8 oz cream cheese (softened)
- 2 large eggs
- 1 cup grated Parmesan cheese
- 2 tbsp fresh basil or thyme (chopped)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and thaw puff pastry.
- Slice zucchinis thinly.
- In a bowl, combine cream cheese, eggs, Parmesan, herbs, salt, and pepper until smooth.
- Roll out puff pastry in a tart pan or baking sheet. Arrange zucchini slices on top.
- Pour filling over zucchini evenly and bake for 30-35 minutes until golden brown.
- Allow to cool slightly before slicing into wedges; serve warm or at room temperature.
