Description

Delicious and creamy zucchini tart topped with a flaky puff pastry crust.


Ingredients

Scale
  • 1 sheet puff pastry (thawed)
  • 2 medium zucchinis (sliced thinly)
  • 8 oz cream cheese (softened)
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 2 tbsp fresh basil or thyme (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and thaw puff pastry.
  2. Slice zucchinis thinly.
  3. In a bowl, combine cream cheese, eggs, Parmesan, herbs, salt, and pepper until smooth.
  4. Roll out puff pastry in a tart pan or baking sheet. Arrange zucchini slices on top.
  5. Pour filling over zucchini evenly and bake for 30-35 minutes until golden brown.
  6. Allow to cool slightly before slicing into wedges; serve warm or at room temperature.
