- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup strong espresso, cooled
- 1 tablespoon cocoa powder
- 1 tablespoon powdered sugar
- 1/2 cup mascarpone cheese
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the Dough: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just incorporated.
- Shape the Cookies: Roll the dough into small balls, about 1 inch in diameter. Place them on the prepared baking sheet, leaving some space between each ball.
- Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
- Prepare Mascarpone Mixture: While the cookies are cooling, mix the mascarpone cheese with the cooled espresso in a small bowl until smooth.
- Assemble: Once the cookies are cool, take a small spoonful of the mascarpone mixture and spread it on top of each cookie.
- Dust with Cocoa: Mix the cocoa powder and powdered sugar together and dust over the top of the cookies.
Notes
- Ensure the espresso is completely cooled before mixing with the mascarpone to prevent it from becoming too runny.
- For extra flavor, add a drop of coffee liqueur to the mascarpone mixture.
- Store the cookies in an airtight container in the refrigerator for up to 3 days.
- Serve these delightful bites chilled to enhance the tiramisu flavor.
