Description

This hearty and delicious loaded baked potato dish can be enjoyed as a main course or a satisfying side.

Ingredients

Scale
  • 4 large russet potatoes
  • 1 ½ cups cheddar cheese, shredded
  • 1 cup cooked beef chunks
  • 6 slices bacon, cooked and crumbled
  • 1 cup sour cream
  • ½ cup green onions, chopped
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • 2 tablespoons butter
  • 1 teaspoon garlic powder (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Potatoes: Wash the potatoes thoroughly and pat dry. Rub them with olive oil and sprinkle with salt. Prick each potato with a fork several times.
  3. Bake Potatoes: Place the potatoes on a baking sheet and bake in the preheated oven for about 1 hour or until tender.
  4. Cook Bacon: While the potatoes are baking, cook the bacon in a pan over medium heat until crispy. Remove and crumble, then set aside.
  5. Prepare Beef: In the same pan, add the cooked beef chunks and warm them up. Season with salt, pepper, and garlic powder if desired.
  6. Assemble Toppings: Once the potatoes are cooked, remove them from the oven. Let cool for a few minutes before handling. Slice each potato open and fluff the insides with a fork. Add a small amount of butter.
  7. Add Cheese and Beef: Sprinkle a generous amount of cheddar cheese inside each potato, followed by the warm beef chunks. The heat from the potatoes will melt the cheese slightly.
  8. Top with Bacon and Sour Cream: Add crumbled bacon on top, followed by a dollop of sour cream. Sprinkle with chopped green onions for a fresh finish.

Notes

  • Crispy Skins: For extra crispy potato skins, bake them directly on the oven rack.
  • Alternative Toppings: Customize with toppings like jalapeños, chives, or even sautéed mushrooms for variety.
  • Cheese Variety: Experiment with different types of cheese like mozzarella or pepper jack for a different flavor profile.
