Ingredients
Scale
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup salted butter (room temperature)
- 1 teaspoon vanilla extract
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup unsweetened cocoa powder
- 1/2 cup strongly brewed coffee (cooled)
- 1/2 cup buttermilk
- 3/4 cup salted butter (room temperature)
- 2 1/2 cups powdered sugar
- 2 tablespoons cocoa powder
- 2 tablespoons strongly brewed coffee (cooled)
Instructions
- Preheat the oven to 400ºF. Line a baking sheet with parchment paper.
- In the bowl of a stand mixer, cream together the sugar, salt, butter, vanilla and egg. Mix well, scraping the sides of the bowl as needed.
- In a separate bowl, sift together the flour, baking soda and cocoa. Add this to the creamed butter mixture alternately with the coffee and buttermilk.
- Drop the batter by teaspoonfuls onto the prepared pan. Bake for 7-8 minutes. Set the cakes aside to cool.
- In a stand mixer bowl, whip the room temperature butter on medium speed until it is almost white in appearance.
- Add the powdered sugar and cocoa powder. Mix on low speed.
- Add in the cooled coffee and whip the buttercream on medium speed for 3-4 minutes, or until light and fluffy.
- Choose two whoopie pies that are about the same size. Spread the buttercream between the two cakes.

- This should make about 18 whoopie pies that are 2 1/2″ in diameter.
