- 2 cups carrots (diced)
- 2 cups celery (chopped)
- 1 cup bell peppers (chopped)
- 4 cloves garlic (minced)
- 1 large onion (chopped)
- 2 cups zucchini (diced)
- 6 cups vegetable broth (low-sodium)
- 1 can (15 oz) diced tomatoes
- 4 cups spinach (fresh)
- 1 tsp thyme (dried)
- 1 tsp basil (dried)

Instructions
- Chop the carrots, celery, bell peppers, onion, and zucchini into bite-sized pieces.
- Mince the garlic cloves and add them to your chopped vegetables.
- Place all the chopped vegetables, minced garlic, spinach, diced tomatoes, herbs, salt, and pepper into your slow cooker. Mix well to combine.
- Pour in the vegetable broth, ensuring the veggies are submerged.
- Cover your slow cooker and set it to low for 6-8 hours.
- Once cooked, give the soup a gentle stir and ladle it into warm bowls. Garnish with fresh herbs if desired.
