Ingredients

  • 2 cups carrots (diced)
  • 2 cups celery (chopped)
  • 1 cup bell peppers (chopped)
  • 4 cloves garlic (minced)
  • 1 large onion (chopped)
  • 2 cups zucchini (diced)
  • 6 cups vegetable broth (low-sodium)
  • 1 can (15 oz) diced tomatoes
  • 4 cups spinach (fresh)
  • 1 tsp thyme (dried)
  • 1 tsp basil (dried)

Instructions

  1. Chop the carrots, celery, bell peppers, onion, and zucchini into bite-sized pieces.
  2. Mince the garlic cloves and add them to your chopped vegetables.
  3. Place all the chopped vegetables, minced garlic, spinach, diced tomatoes, herbs, salt, and pepper into your slow cooker. Mix well to combine.
  4. Pour in the vegetable broth, ensuring the veggies are submerged.
  5. Cover your slow cooker and set it to low for 6-8 hours.
  6. Once cooked, give the soup a gentle stir and ladle it into warm bowls. Garnish with fresh herbs if desired.
