Mini Blueberry Muffins

Description

Delicious mini blueberry muffins made with pancake mix, perfect for breakfast or snack time!


Ingredients

Scale
  • 2 cups pancake mix (krusteaz)
  • 1 1/3 cups milk
  • 2 large eggs
  • 1 cup blueberries (fresh, rinsed)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Put mini muffin liners in muffin pan or spray with non stick spray.
  3. In a bowl, whisk together milk, eggs, and pancake mix until smooth.
  4. Gently fold in berries or chocolate chips.
  5. Fill each one with about 2 tbsp. of batter, no more than 3/4 of the way full.
  6. Bake for 11-12 minutes for mini size, 18-20 for regular muffin size or until the top springs back when touched lightly.
  7. Allow to cool slightly, dip into syrup and enjoy.

Notes

  • Can substitute blueberries with other fruits or chocolate chips.
  • For mini muffins, baking time is 11-12 minutes, for regular size muffins it’s 18-20 minutes.
