Description
Delicious mini blueberry muffins made with pancake mix, perfect for breakfast or snack time!
Ingredients

- 2 cups pancake mix (krusteaz)
- 1 1/3 cups milk
- 2 large eggs
- 1 cup blueberries (fresh, rinsed)
Instructions
- Preheat oven to 350 degrees F.
- Put mini muffin liners in muffin pan or spray with non stick spray.
- In a bowl, whisk together milk, eggs, and pancake mix until smooth.
- Gently fold in berries or chocolate chips.
- Fill each one with about 2 tbsp. of batter, no more than 3/4 of the way full.
- Bake for 11-12 minutes for mini size, 18-20 for regular muffin size or until the top springs back when touched lightly.
- Allow to cool slightly, dip into syrup and enjoy.
Notes
- Can substitute blueberries with other fruits or chocolate chips.
- For mini muffins, baking time is 11-12 minutes, for regular size muffins it’s 18-20 minutes.
