Description

A delightful fusion of baklava and cheesecake featuring layers of phyllo dough, creamy cheesecake, and a rich honey syrup.

Ingredients

Scale
  • 1 package phyllo dough, thawed
  • 1 cup unsalted butter, melted
  • 2 cups crushed pistachios
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup honey
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Layer Phyllo Dough: Lay a sheet of phyllo in the pan and brush with melted butter. Repeat with about 10 sheets, brushing each layer. Sprinkle a layer of crushed pistachios evenly over the phyllo layers.
  3. Make Cheesecake Filling: In a large bowl, beat the cream cheese and sugar until smooth. Add in the heavy cream, eggs, and vanilla. Mix until just combined. Pour the cheesecake mixture over the phyllo and pistachio layers.
  4. Prepare Top Phyllo Layer: Layer another 10 sheets of phyllo on top of the cheesecake mixture, brushing each with butter. Finish with a layer of crushed pistachios.
  5. Bake: Place in the oven and bake for about 60 minutes, or until the cheesecake layer is set and the top is golden brown.
  6. Honey Syrup: While baking, combine honey, lemon juice, and cinnamon in a small saucepan. Heat until smooth and slightly thickened.
  7. Assemble and Chill: Pour the honey syrup over the hot cheesecake. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.

Notes

  • Keep the phyllo dough covered with a damp cloth while working to prevent it from drying out.
  • Ensure cream cheese is fully softened to avoid lumps.
  • For a more robust flavor, toast the pistachios lightly before crushing.
  • Use a sharp knife to cut through the layers before serving, as this will help maintain the structure of the baklava crust.
