  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. Prepare the Crust: In a mixing bowl, combine flour, sugar, and salt. Cut in the cold butter until the mixture is crumbly. Press half of the mixture into the bottom of the prepared baking pan to form the crust.
  3. Bake the Crust: Bake the crust for 15 minutes or until light golden brown. Remove from oven and let it cool slightly.
  4. Prepare the Cream Cheese Filling: In a separate bowl, beat the softened cream cheese and 1/2 cup of sugar until smooth. Add the egg and vanilla extract, beating until fully combined.
  5. Assemble the Bars: Spread the cream cheese mixture evenly over the baked crust. Distribute the raspberries evenly over the cream cheese layer. Sprinkle the remaining flour mixture over the top.
  6. Bake the Bars: Return the pan to the oven and bake for an additional 25-30 minutes or until the top is golden and set.
  7. Cool and Serve: Allow the bars to cool completely in the pan on a wire rack. Dust with powdered sugar, if desired, before cutting into squares and serving.
