Description
A delicious side dish of roasted carrots tossed in honey and garlic.
Ingredients

- 2 pounds carrots
- 2 tablespoons olive oil (or avocado oil)
- 3–4 garlic cloves (minced)
- 2 1/2 tablespoons honey (or maple syrup)
- 1/2 teaspoon kosher salt (or to taste)
- 1/4 teaspoon fresh ground pepper (or to taste)
- Chopped fresh parsley (to garnish)
Instructions
- Preheat the oven to 400F.
- Peel and slice the carrots diagonally into about 2-inch pieces.
- Place the carrots in a large bowl. Add olive oil, garlic, honey, kosher salt, and fresh ground pepper. Mix well until all pieces are evenly coated.
- In a large non-stick baking pan, arrange the coated carrots in a single layer.
- Place into the preheated oven and bake for about 15-20 minutes, or until caramelized and tender.
- Transfer to a serving bowl and garnish with chopped fresh parsley.
Notes
- For a healthier option, you can substitute honey with maple syrup.
- Adjust salt and pepper according to personal taste.
