Description

Delicious pancakes stuffed with savory sausage, perfect for breakfast.


Ingredients

  • 1½ cups all-purpose flour
  • 3½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp sugar
  • 1¼ cups milk
  • 1 egg
  • 3 tbsp melted butter
  • ½ tsp vanilla extract
  • 68 small beef breakfast sausage patties
  • Butter (for greasing)
  • Maple syrup
  • Butter squares

Instructions

  1. Cook the sausage: Sear sausage patties over medium heat until browned and cooked through. Drain on paper towels and set aside.
  2. Mix the pancake batter: Whisk flour, baking powder, salt, and sugar. In another bowl combine milk, egg, melted butter, and vanilla. Mix wet into dry until just smooth — keep it light and fluffy.
  3. Stuff & cook the pancakes: Heat a greased nonstick pan over medium heat. Pour a small circle of batter. Place a sausage patty in the center, then cover with a little more batter. Cook until bubbles form, flip, and cook until golden.
  4. Stack & serve: Layer pancakes high, add butter on top, and pour warm maple syrup generously.

  • These pancakes can be made ahead of time and reheated.
  • Add berries or chocolate chips for a sweeter variation.
