Ingredients

- 1½ cups all-purpose flour
- 3½ tsp baking powder
- ½ tsp salt
- 1 tbsp sugar
- 1¼ cups milk
- 1 egg
- 3 tbsp melted butter
- ½ tsp vanilla extract
- 6–8 small beef breakfast sausage patties
- Butter (for greasing)
- Maple syrup
- Butter squares
Instructions
- Cook the sausage: Sear sausage patties over medium heat until browned and cooked through. Drain on paper towels and set aside.
- Mix the pancake batter: Whisk flour, baking powder, salt, and sugar. In another bowl combine milk, egg, melted butter, and vanilla. Mix wet into dry until just smooth — keep it light and fluffy.
- Stuff & cook the pancakes: Heat a greased nonstick pan over medium heat. Pour a small circle of batter. Place a sausage patty in the center, then cover with a little more batter. Cook until bubbles form, flip, and cook until golden.
- Stack & serve: Layer pancakes high, add butter on top, and pour warm maple syrup generously.
Notes
- These pancakes can be made ahead of time and reheated.
- Add berries or chocolate chips for a sweeter variation.
