Description

A delicious savory bread pudding made with Gruyere cheese and fresh chives.


Ingredients

Scale
  • 3 eggs
  • 250 g day-old French bread, cubed (about half a large loaf)
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon onion powder
  • 2 tablespoons fresh chives, chopped
  • 1 cup milk (2% or 3 %)
  • 3 ounces Gruyere cheese, shredded (a bit more than ⅓ cup)
  • Salt and black pepper, to taste

Instructions

  1. In a mixing bowl, whisk together eggs, milk, Dijon mustard, onion powder, salt, and pepper until smooth.
  2. Lightly grease a baking dish. Add cubed bread and pour the egg mixture evenly over the top. Press gently to help the bread absorb the custard.
  3. Sprinkle shredded Gruyere and chopped chives evenly over the top.
  4. Cover and refrigerate overnight (or at least 4 hours).
  5. Preheat oven to 350°F (175°C). Bake uncovered for 30–35 minutes until puffed and golden.
  6. Cool slightly, garnish with extra chives, and serve warm.

Notes

  • For best results, use day-old bread to enhance the texture of the pudding.
  • This dish can be prepared ahead of time and baked just before serving.
