Description

A comforting slow cooker chicken stew with fluffy dumplings, perfect for any occasion.


Ingredients

  • 2 tbsp unsalted butter (melted)
  • 1 tbsp all-purpose flour
  • 1 ½ pounds boneless (skinless chicken thighs or breasts)
  • 3 garlic cloves (minced)
  • 1 celery stalk (chopped)
  • 1 cup frozen carrots and peas
  • 1 small onion (finely chopped)
  • 1 tbsp lemon juice
  • 1 dried bay leaf
  • 1 tbsp tomato paste
  • ½ tsp dried thyme
  • ¾ cup chicken broth
  • salt and black pepper to taste
  • 3 tbsp chopped fresh parsley (divided)
  • ¾ cup all-purpose flour
  • 2 tbsp fine cornmeal
  • 1 ½ tsp baking powder
  • salt to taste
  • ½ cup buttermilk
  • 2 tbsp melted unsalted butter

Instructions

  1. Melt the butter and whisk with the flour until smooth.
  2. Place the chicken thighs in the slow cooker.
  3. Add the garlic, celery, frozen carrots and peas, and onion.
  4. Stir in the lemon juice, bay leaf, tomato paste, thyme, chicken broth, and butter-flour mixture.
  5. Season with salt and black pepper.
  6. Cover and cook on Low for 5–6 hours or on High for 3–4 hours, until the chicken is tender.
  7. Remove the chicken, shred with two forks, and return it to the stew.
  8. Stir in 2 tbsp of parsley.
  9. For the dumplings, whisk together the flour, cornmeal, baking powder, and salt in a bowl.
  10. Add the buttermilk and melted butter and stir until just combined.
  11. Drop spoonfuls of dough over the stew.
  12. Cover and cook on High for 40 minutes, until the dumplings are fluffy.
  13. Remove the lid and cook for 15 minutes to firm up the tops of the dumplings.
  14. Sprinkle with the remaining parsley and serve.

Notes

  • This dish can be made with chicken breasts or thighs based on preference.
  • Add more vegetables like potatoes or green beans for additional nutrition.
