Description

A delicious smoked cheese dip, perfect for gatherings and parties.


Ingredients

Scale
  • 1 lb sausage (ground, or ground beef, precooked)
  • 8 oz pepper jack cheese
  • 8 oz cheddar cheese
  • 8 oz monterey jack cheese
  • 2/3 c half and half
  • 1 jalapeno (optional, diced)
  • 4 oz green chiles
  • 3 tomatoes (diced, or can of rotel)
  • 8 scallions (diced)
  • 1 tbsp minced garlic
  • 1 tbsp cilantro (fresh, diced)
  • 1/2 bell pepper (diced)

Instructions

  1. Cook ground beef or sausage in a pan until browned, drain grease.
  2. Chop scallions, tomatoes, red pepper, and jalapeno pepper.
  3. Place these and all other ingredients listed into a disposable aluminum foil pan.
  4. Brush grate clean and place aluminum foil over base of smoker to help keep it clean.
  5. Set smoker to smoke setting, set temperature to 250° F.
  6. Place aluminum foil pan on smoker grate.
  7. Smoke for 2 1/2 hours, stirring periodically as cheese melts to incorporate all ingredients.
  8. Serve as a dip.

Notes

  • For a spicier dip, include the diced jalapeno.
  • Pair with tortilla chips or fresh veggies for dipping.
