- 2 cups fresh strawberries, sliced
- 1 can (13.5 oz) coconut cream
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1 tablespoon gelatin
- 1/4 cup hot water
- 10–12 pieces ladyfingers or sponge cake
- 1 cup shredded coconut
- 1 teaspoon vanilla extract

Instructions
- Prepare the Gelatin Mixture: Dissolve the gelatin in hot water and let it bloom for about 5 minutes until it thickens.
- Make the Strawberry Mixture: In a blender, puree the strawberries with half of the sugar until smooth. Add the vanilla extract and a few drops of pink food coloring if desired for a more vibrant color.
- Prepare the Coconut Cream: Refrigerate the coconut cream can overnight. Scoop out the solid cream and leave the liquid behind. Beat the coconut cream until smooth and creamy.
- Whip the Heavy Cream: In a separate bowl, whip the heavy cream with the remaining sugar until soft peaks form.
- Combine Ingredients: Gently fold the gelatin into the strawberry mixture. Gradually fold in the whipped cream followed by the coconut cream, ensuring everything is well incorporated.
- Layer the Dessert: In a glass dish, arrange a layer of ladyfingers or sponge cake at the bottom. Pour half of the strawberry coconut cream mixture over the cake layer. Add another layer of cake pieces and spread the remaining cream mixture on top. Sprinkle shredded coconut on top for garnish.
- Chill: Cover the dish and refrigerate the dessert for at least 4 hours or overnight to set.

- Ensure the coconut cream is thoroughly chilled to separate the cream from the liquid.
- For added flavor, consider incorporating a tablespoon of coconut rum into the cream mixture.
- You can substitute fresh strawberries for frozen ones if desired; just make sure to thaw them completely before use.
