  • 200g spinach leaves

  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  2. Prepare the Sweet Potatoes:
    Wash the sweet potatoes thoroughly. Pierce them with a fork several times. Bake them on a baking sheet for about 45-50 minutes, or until tender.
  3. Prepare the Creamy Mushroom Filling:
    While the sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic, sauté until the onions are translucent. Add the mushrooms to the skillet and cook until they are golden brown. Stir in the spinach leaves and cook until they are wilted. Add butter and pour in the heavy cream, stirring well. Season with salt and pepper to taste. Let the mixture simmer for about 5 minutes, stirring occasionally.
  4. Assemble the Dish:
    Once the sweet potatoes are done, remove them from the oven. Slice each sweet potato in half lengthwise and slightly mash the insides with a fork to make space for the filling. Spoon the creamy mushroom mixture over each sweet potato half.
  5. Serve:
    Garnish with freshly chopped parsley. Serve warm.
