Description

Delicious vegan doughnuts made with puff pastry and filled with sweet cinnamon apples. Perfect for a treat!


Ingredients

  • 1 sheet vegan puff pastry (thawed)
  • 2 medium apples (peeled, cored, diced)
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ½ cup powdered sugar (for icing)
  • 1 tablespoon plant-based milk (for brushing and icing)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix diced apples, brown sugar, cinnamon, lemon juice, and cornstarch. Allow to macerate for 10 minutes.
  3. Roll out puff pastry on a floured surface and cut into squares.
  4. Place apple mixture in the center of each square, fold over the pastry, seal edges with a fork.
  5. Brush tops with plant-based milk and bake for 20-25 minutes until golden brown.
  6. For icing, whisk powdered sugar with plant-based milk until smooth; drizzle over cooled doughnuts.
