- 1 sheet vegan puff pastry (thawed)
- 2 medium apples (peeled, cored, diced)
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- ½ cup powdered sugar (for icing)
- 1 tablespoon plant-based milk (for brushing and icing)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix diced apples, brown sugar, cinnamon, lemon juice, and cornstarch. Allow to macerate for 10 minutes.
- Roll out puff pastry on a floured surface and cut into squares.
- Place apple mixture in the center of each square, fold over the pastry, seal edges with a fork.
- Brush tops with plant-based milk and bake for 20-25 minutes until golden brown.
- For icing, whisk powdered sugar with plant-based milk until smooth; drizzle over cooled doughnuts.
