Delicious pistachio muffins with a creamy glaze, perfect for any occasion!
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped pistachios
- 1/2 cup white chocolate chips
- 1/2 cup pistachio pudding mix
- 1/2 cup powdered sugar (for glaze)
- 2–3 tablespoons milk (for glaze, adjust to taste)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the melted butter, eggs, milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the chopped pistachios and white chocolate chips.
- Fill each muffin liner halfway with the batter.
- Add a spoonful of pistachio pudding mix to the center of each, then top with more batter until the liners are about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the edge of the muffin comes out clean.
- Let the muffins cool. To make the glaze, mix the powdered sugar and milk until smooth.
- Drizzle the glaze over the cooled muffins and sprinkle with additional chopped pistachios.
Notes
- For a sweeter glaze, adjust the amount of milk to your preference.
