  • 1 cup shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup lime juice
  • 2 tablespoons lime zest
  • 1/4 cup maple syrup or honey
  • A pinch of salt
  • Extra shredded coconut or crushed graham crackers for coating

Instructions

  1. In a medium bowl, combine the shredded coconut, almond flour, melted coconut oil, lime juice, lime zest, maple syrup or honey, and salt. Mix until a dough-like consistency forms.
  2. Cover the bowl and refrigerate the mixture for about 20-30 minutes. This will make it easier to form the balls.
  3. Using a tablespoon measure, scoop out the mixture and roll it into small balls with your hands.
  4. Roll each ball in extra shredded coconut or crushed graham crackers to coat them evenly.
  5. Place the coated balls on a baking sheet lined with parchment paper and refrigerate them for another 15-20 minutes to firm up.
