- 1 cup shredded coconut
- 1/2 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup lime juice
- 2 tablespoons lime zest
- 1/4 cup maple syrup or honey
- A pinch of salt
- Extra shredded coconut or crushed graham crackers for coating
Instructions
- In a medium bowl, combine the shredded coconut, almond flour, melted coconut oil, lime juice, lime zest, maple syrup or honey, and salt. Mix until a dough-like consistency forms.
- Cover the bowl and refrigerate the mixture for about 20-30 minutes. This will make it easier to form the balls.
- Using a tablespoon measure, scoop out the mixture and roll it into small balls with your hands.
- Roll each ball in extra shredded coconut or crushed graham crackers to coat them evenly.
- Place the coated balls on a baking sheet lined with parchment paper and refrigerate them for another 15-20 minutes to firm up.
Notes
- You can adjust the sweetness by adding more or less maple syrup or honey.
- For extra flavor, add a teaspoon of vanilla extract.
- These coconut balls can be stored in an airtight container in the refrigerator for up to a week.
