A delicious chicken salad featuring juicy grapes and crunchy nuts, perfect for a sandwich or on its own.

- 2 cups cooked chicken, shredded
- 1 cup seedless grapes, halved
- 1/2 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 1/4 cup walnuts or pecans, chopped (optional)
Instructions
- If you don’t have leftover cooked chicken, boil or bake chicken breasts until cooked through. Once cooled, shred the chicken into bite-sized pieces.
- In a large mixing bowl, combine the shredded chicken, halved grapes, chopped celery, and red onion.
- In a separate small bowl, whisk together mayonnaise and Dijon mustard until smooth. Add salt and pepper to taste.
- Pour the dressing over the chicken mixture. Gently toss until everything is well-coated.
- If using walnuts or pecans, fold them into the salad for an added crunch.
- For the best flavor, let the salad chill in the fridge for 30 minutes before serving. Enjoy it in a sandwich, on a bed of lettuce, or as is!
