Description
A delicious blueberry cheesecake with a floral garnish that makes for a stunning dessert.
Ingredients
Scale
- 2 cups fresh blueberries
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 3 tbsp blueberry jam or puree
- 2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- Edible flowers for garnish
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1/4 cup water
- Pinch of salt
- 2 tbsp powdered sugar (for topping)
Instructions
- Prepare the Crust: Mix the crushed graham crackers with melted butter and a pinch of salt until well combined. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes to set.
- Make the Blueberry Sauce: In a saucepan, combine 1 cup blueberries, lemon juice, cornstarch, and water. Cook over medium heat until the sauce thickens. Allow it to cool.
- Prepare the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add vanilla extract and mix well. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
- Assemble the Cheesecake: Spread half of the cheesecake mixture over the chilled crust. Drizzle half of the blueberry jam or puree over the cheesecake mixture and swirl with a knife. Add the remaining cheesecake mixture, smoothing the top. Pour the cooled blueberry sauce over the top layer and spread evenly.
- Chill the Cheesecake: Cover and refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set.
- Garnish and Serve: Before serving, top with the remaining fresh blueberries and sprinkle with powdered sugar. Garnish with edible flowers for a decorative touch.
Notes
- Ensure cream cheese is at room temperature for a smoother mixture.
- Use a springform pan for easy removal and a clean presentation.
- For a more intense blueberry flavor, increase the amount of blueberry jam or puree.
- Make sure the sauce is completely cooled before adding to the cheesecake to prevent it from melting.
- Experiment with different edible flowers to complement the floral garnish.
