Description

Ingredients

  • 1 tbsp cornstarch
  • 1/4 cup water
  • Pinch of salt
  • 2 tbsp powdered sugar (for topping)

Instructions

  1. Prepare the Crust: Mix the crushed graham crackers with melted butter and a pinch of salt until well combined. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes to set.
  2. Make the Blueberry Sauce: In a saucepan, combine 1 cup blueberries, lemon juice, cornstarch, and water. Cook over medium heat until the sauce thickens. Allow it to cool.
  3. Prepare the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add vanilla extract and mix well. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
  4. Assemble the Cheesecake: Spread half of the cheesecake mixture over the chilled crust. Drizzle half of the blueberry jam or puree over the cheesecake mixture and swirl with a knife. Add the remaining cheesecake mixture, smoothing the top. Pour the cooled blueberry sauce over the top layer and spread evenly.
  5. Chill the Cheesecake: Cover and refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set.
  6. Garnish and Serve: Before serving, top with the remaining fresh blueberries and sprinkle with powdered sugar. Garnish with edible flowers for a decorative touch.
