Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 8 ounces full-fat cream cheese, softened
  • 1 cup powdered sugar (confectioners’ sugar)
  • 1 teaspoon vanilla extract
  • 8 mini Cadbury creme eggs

Instructions

  1. Step 1: Prepare Your Stars (Cadbury Eggs & Cheesecake Filling)
    Freeze mini Cadbury Eggs or slice larger ones into 2-3 pieces and freeze for at least 30 minutes.
  2. In a medium bowl, combine softened full-fat cream cheese, powdered sugar, and vanilla extract. Beat until smooth.
  3. Transfer cheesecake mixture into a piping bag or Ziploc bag and pipe small dollops onto a parchment-lined tray. Freeze for at least 30 minutes.
  4. Step 2: Get Your Cookie Dough Ready
    Whisk together all-purpose flour, baking soda, and salt in a medium bowl. Set aside.
  5. Cream together softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  6. Beat in room temperature eggs one at a time, then mix in vanilla extract.
  7. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Fold in chocolate chips if using.
  8. Step 3: Assemble Your Stuffed Cookie Creations
    Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper.
  9. Retrieve frozen Cadbury Eggs and cheesecake filling.
  10. Scoop about 2 tablespoons of cookie dough, flatten slightly, and place one cheesecake dollop and one Cadbury Egg piece in the center.
  11. Enclose the filling completely with cookie dough and roll into a smooth ball. Repeat with remaining dough and filling.
