Description

A delicious meatloaf filled with cheese and bacon.

Ingredients

Scale
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup shredded cheddar cheese
  • 8 slices bacon
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Meat Mixture: In a large bowl, combine ground beef, ground pork, chopped onion, minced garlic, eggs, milk, breadcrumbs, Parmesan cheese, Worcestershire sauce, salt, pepper, thyme, and paprika. Mix well until all ingredients are evenly blended.
  3. Shape the Meatloaf: On a parchment-lined baking sheet, shape the meat mixture into a loaf.
  4. Add Cheese and Bacon: Insert shredded cheddar cheese into the center of the loaf, and fold the meat over to cover the cheese completely. Lay bacon slices over the top of the loaf, tucking the edges underneath to secure them.
  5. Bake: Place the loaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Broil (Optional): For extra crispiness, broil the meatloaf for an additional 2-3 minutes until the bacon is crispy and the cheese is bubbly.
  7. Rest and Slice: Let the meatloaf rest for 10 minutes before slicing. This helps the juices redistribute and makes slicing easier.
  8. Garnish: Sprinkle chopped fresh parsley on top before serving.

Notes

  • For extra flavor, consider adding BBQ sauce or ketchup on top of the meatloaf before baking.
  • You can replace cheddar cheese with your favorite cheese blend for a different taste.
  • Ensure you don’t overmix the meat to keep the loaf tender.
  • Use a meat thermometer to ensure the loaf is cooked through but not overdone.
