Description

A delicious breakfast casserole featuring eggs, sausage, cheese, and hash browns, perfect for any morning!


Ingredients

Scale
  • 4 large eggs (whisked)
  • 1/2 teaspoon salt
  • Pinch pepper
  • 1 cup milk
  • 1 pound maple sage breakfast sausage (or any other flavor)
  • 1/4 cup onion (minced)
  • 1 bag (15 oz) shredded hash browns
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Whisk together eggs, salt, pepper, and milk.
  3. Set aside to allow the salt to break down the egg, creating a fluffier baked egg dish.
  4. Spray an 8×8-inch baking dish with nonstick spray.
  5. In a large skillet, cook sausage until almost all of the pink is gone.
  6. Add the onion and finish cooking the meat, stirring occasionally.
  7. Using a slotted spoon, remove the meat and onions to a plate.
  8. Add hash browns to skillet and cook until lightly brown, flip and cook on the other side, adding a drizzle of oil if needed.
  9. Place hash browns in bottom of lightly greased square pan. Top with sausage and 1/2 of each cheese.
  10. Pour egg mixture over hash brown mixture and sprinkle with remaining cheese.
  11. Sprinkle a little fresh cracked pepper over the top and bake for 35-40 minutes or until set and golden.

Notes

  • For added flavor, consider seasoning the egg mixture with herbs like parsley or chives.
  • This casserole can be prepared the night before and baked in the morning for convenience.
