Description

A delicious lemon garlic chicken pasta dish that’s perfect for any dinner.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1 cup low-sodium chicken broth
  • 8 oz cremini or button mushrooms, sliced
  • 8 oz spaghetti or fettuccine
  • 2 tbsp capers, drained
  • 3 tbsp olive oil
  • 2 tbsp butter

Instructions

  1. Prepare your ingredients and bring a pot of salted water to boil for pasta.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper; sear until golden brown on both sides (about 3 minutes each). Remove from skillet.
  3. In the same skillet, melt butter and sauté garlic until fragrant (~1 minute). Add sliced mushrooms; cook until tender.
  4. Pour in chicken broth, lemon juice, and capers. Scrape up any browned bits and drain while reserving some pasta water.
  5. Serve pasta topped with chicken and sauce.

Notes

  • Adjust the amount of lemon juice to taste.
  • You can use any pasta shape you prefer.
  • Make sure to reserve some pasta water to adjust the sauce consistency if needed.
