- 200g dark chocolate, chopped
- 3 large eggs, separated
- 1/2 cup sugar, divided
- 1 cup heavy cream
- 2 tablespoons strong brewed coffee, cooled
- 1 teaspoon vanilla extract
- Pinch of salt
- Chocolate shavings, for garnish
- Maraschino cherries, for garnish
Instructions
- Melt the Chocolate: In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Stir until smooth, then remove from heat and let cool slightly.
- Prepare the Egg Yolks: In a separate bowl, whisk the egg yolks with half the sugar. Slowly add the cooled chocolate, vanilla extract, and brewed coffee. Mix until fully combined.
- Whip the Cream: In a large mixing bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture.
- Beat the Egg Whites: In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.
- Combine Mixtures: Gently fold the egg whites into the chocolate mixture, ensuring not to deflate the mousse.
- Assemble the Dessert: Spoon the mousse into individual serving glasses. Refrigerate for at least 2 hours or until set.
- Garnish: Before serving, top each dessert with chocolate shavings and a maraschino cherry.
