  • 2 tablespoons strong brewed coffee, cooled

  • Maraschino cherries, for garnish

Instructions

  1. Melt the Chocolate: In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Stir until smooth, then remove from heat and let cool slightly.
  2. Prepare the Egg Yolks: In a separate bowl, whisk the egg yolks with half the sugar. Slowly add the cooled chocolate, vanilla extract, and brewed coffee. Mix until fully combined.
  3. Whip the Cream: In a large mixing bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture.
  4. Beat the Egg Whites: In a clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.
  5. Combine Mixtures: Gently fold the egg whites into the chocolate mixture, ensuring not to deflate the mousse.
  6. Assemble the Dessert: Spoon the mousse into individual serving glasses. Refrigerate for at least 2 hours or until set.
  7. Garnish: Before serving, top each dessert with chocolate shavings and a maraschino cherry.
