Description

Delicious chocolate-filled Danish pancake bites that are perfect for breakfast or dessert!


Ingredients

  • 1 cup milk
  • 2 large eggs

  • Chocolate chips or chocolate spread (Nutella)
  • Extra butter or oil for greasing the pan
  • Powdered sugar for dusting (optional)

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Mix Wet Ingredients: In another bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Mix well.
  3. Combine Ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until you have a smooth batter.
  4. Preheat and Prepare the Pan: Preheat an Aebleskiver pan over medium heat and lightly grease each cavity with butter or oil.
  5. Cook the Pancake Bites: Pour about 1 tablespoon of batter into each cavity of the pan. Add a few chocolate chips or a teaspoon of chocolate spread in the center of each batter-filled pocket. Quickly cover with a bit more batter to seal the chocolate inside.
  6. Flip and Cook: Once the edges start to set, use a skewer or fork to gently turn each pancake ball over, allowing the other side to cook. This should take about 2-3 minutes per side until they are golden brown and cooked through.
  7. Serve: Remove the pancake bites from the pan and let them cool slightly. Dust with powdered sugar if desired and serve warm.

Notes

  • Ensure the pan is hot enough before adding the batter to achieve a nice golden crust.
  • If the batter is too thick, you can add a little more milk to achieve the desired consistency.
  • Experiment with different fillings such as fruit preserves or peanut butter for variety.
