Instructions
- Prepare the churro filling by mixing 1/4 cup brown sugar, 1 teaspoon cinnamon, and a pinch of salt in a bowl.
- In another bowl, whisk together 4 large eggs, 1 cup of milk, 1 teaspoon vanilla extract, and a pinch of salt until fully combined and fluffy.
- Spread the churro filling on one slice of bread and top with another slice to create a sandwich. Repeat with remaining slices.
- Melt 2 tablespoons of butter in a skillet over medium heat.
- Dip each sandwich in the egg mixture, allowing it to soak briefly, then cook in the skillet for 3-4 minutes per side until golden brown.
- Roll each piece of French toast in the cinnamon sugar mixture while still warm.
- Serve warm, drizzled with syrup or topped with whipped cream if desired.
