- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons red curry paste
- 4 cups vegetable broth
- 1 can (13 oz) full-fat coconut milk
- 1 cup sliced carrots
- 1 red bell pepper, thinly sliced
- 1 cup mushrooms, sliced
- 1 tablespoon soy sauce
- 1 teaspoon brown sugar
- 1 tablespoon fresh lime juice
- 1 cup chopped spinach or baby bok choy
- 1 package refrigerated dumplings (vegetable or chicken)
- 2 tablespoons chopped fresh cilantro
- 1 green onion, sliced
Instructions
- Start by heating the vegetable oil in a large pot over medium heat. When the oil shimmers, add the chopped onion. Let it soften slowly.
- Add the garlic and grated ginger. Stir for about 30 seconds until fragrant. Be careful not to let them brown too much.
- Spoon in the red curry paste and stir it into the onion mixture. Let it cook for a minute to awaken the spices.
- Pour in the vegetable broth and coconut milk. Stir gently, bringing everything to a gentle simmer.
- Add the sliced carrots, bell pepper, and mushrooms. Let them cook for about 5 to 7 minutes, until they begin to soften but still hold their shape.
- Stir in the soy sauce and brown sugar. Taste and adjust if needed.
- Gently place the dumplings into the simmering soup. Cook according to package instructions, usually about 4 to 6 minutes.
- Add the spinach or bok choy in the final minute of cooking. It wilts quickly.
- Ladle the soup into bowls. Finish with fresh cilantro and sliced green onions. Serve immediately.
