  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can (13 oz) full-fat coconut milk
  • 1 cup sliced carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar
  • 1 tablespoon fresh lime juice
  • 1 cup chopped spinach or baby bok choy
  • 1 package refrigerated dumplings (vegetable or chicken)
  • 2 tablespoons chopped fresh cilantro
  • 1 green onion, sliced

Instructions

  1. Start by heating the vegetable oil in a large pot over medium heat. When the oil shimmers, add the chopped onion. Let it soften slowly.
  2. Add the garlic and grated ginger. Stir for about 30 seconds until fragrant. Be careful not to let them brown too much.
  3. Spoon in the red curry paste and stir it into the onion mixture. Let it cook for a minute to awaken the spices.
  4. Pour in the vegetable broth and coconut milk. Stir gently, bringing everything to a gentle simmer.
  5. Add the sliced carrots, bell pepper, and mushrooms. Let them cook for about 5 to 7 minutes, until they begin to soften but still hold their shape.
  6. Stir in the soy sauce and brown sugar. Taste and adjust if needed.
  7. Gently place the dumplings into the simmering soup. Cook according to package instructions, usually about 4 to 6 minutes.
  8. Add the spinach or bok choy in the final minute of cooking. It wilts quickly.
  9. Ladle the soup into bowls. Finish with fresh cilantro and sliced green onions. Serve immediately.
