Description

A fresh and vibrant salad bowl packed with healthy ingredients, perfect for a quick meal or side dish.

Ingredients

Scale
  • 2 cups Romaine lettuce, chopped
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, diced
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 avocado, diced
  • 1 cup shredded cheddar cheese
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup cilantro, chopped (optional)

Instructions

  1. Prepare the Lettuce: Rinse and chop the Romaine lettuce. Place it in a large salad bowl as the base.
  2. Black Beans and Corn: If using canned black beans and corn, drain and rinse them thoroughly. Add them to the salad bowl.
  3. Dice the Vegetables: Dice the cherry tomatoes and avocado. Add them to the salad.
  4. Cheese: Sprinkle the shredded cheddar cheese on top.
  5. Dressing: In a small bowl, mix the lime juice, olive oil, salt, and pepper. Drizzle the dressing over the salad.
  6. Garnish: Add chopped cilantro for added flavor, if desired.

Notes

  • Avocado: To prevent the avocado from browning, you can add it just before serving or drizzle some extra lime juice over it.
  • Variation: Add grilled chicken or shrimp for extra protein.
  • Spice it Up: Add sliced jalapeños or a sprinkle of chili powder for a spicy kick.
  • Make it Creamy: Stir in a few spoonfuls of sour cream or Greek yogurt for creaminess.
