Instructions
- Prepare the Caramel Filling:
- In a saucepan over medium heat, combine sugar and stir constantly until it melts into a deep amber liquid.
- Remove from heat and carefully stir in the heavy cream, butter, and salt until smooth. Mix in vanilla extract.
- Let the caramel cool slightly and then pour into a piping bag fitted with a small round tip.
- Make the Churro Dough:
- In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
- Reduce heat to low, add flour, and stir rapidly until the mixture forms a ball.
- Remove from heat and let cool for 5 minutes.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in vanilla extract.
- Transfer the dough to a piping bag fitted with a large star tip.
- Fry the Churros:
- Heat oil in a deep pan to 350°F (180°C).
- Pipe 4-inch lengths of dough into the hot oil, cutting with scissors.
- Fry until golden brown, about 2-3 minutes on each side.
- Remove with a slotted spoon and drain on paper towels.
- Coat the Churros:
- Mix sugar and cinnamon in a shallow dish.
- Roll warm churros in the cinnamon sugar mixture until coated.
- Fill the Churros:
- Use the caramel-filled piping bag to fill each churro from both ends with caramel until a bit oozes out.

- Allow the churros to drain well after frying to ensure they remain crispy.
