Instructions

  1. Prepare the Caramel Filling:
    • In a saucepan over medium heat, combine sugar and stir constantly until it melts into a deep amber liquid.
    • Remove from heat and carefully stir in the heavy cream, butter, and salt until smooth. Mix in vanilla extract.
    • Let the caramel cool slightly and then pour into a piping bag fitted with a small round tip.
  2. Make the Churro Dough:
    • In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
    • Reduce heat to low, add flour, and stir rapidly until the mixture forms a ball.
    • Remove from heat and let cool for 5 minutes.
    • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in vanilla extract.
    • Transfer the dough to a piping bag fitted with a large star tip.
  3. Fry the Churros:
    • Heat oil in a deep pan to 350°F (180°C).
    • Pipe 4-inch lengths of dough into the hot oil, cutting with scissors.
    • Fry until golden brown, about 2-3 minutes on each side.
    • Remove with a slotted spoon and drain on paper towels.
  4. Coat the Churros:
    • Mix sugar and cinnamon in a shallow dish.
    • Roll warm churros in the cinnamon sugar mixture until coated.
  5. Fill the Churros:
    • Use the caramel-filled piping bag to fill each churro from both ends with caramel until a bit oozes out.
