Description

Ingredients

  • 24 oz (675g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (100g) brown sugar
  • 1 1/2 tbsp ground cinnamon
  • 1/4 cup (60g) unsalted butter, melted
  • 1 1/2 cups (150g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (120g) unsalted butter, melted

Instructions

  1. Prepare the Crust: Preheat the oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch (23cm) springform pan. Bake for 10 minutes, then set aside to cool.
  2. Make the Cinnamon Swirl: In a small bowl, mix brown sugar, cinnamon, and melted butter until combined. Set aside.
  3. Prepare the Cheesecake Batter: In a large mixing bowl, beat the cream cheese and sugar until smooth. Add in sour cream, vanilla extract and mix until combined. Add eggs, one at a time, beating after each addition until incorporated.
  4. Assemble the Cheesecake: Pour half of the batter over the cooled crust. Drizzle half of the cinnamon mixture over the batter and swirl with a knife. Pour the remaining batter over the swirl. Drizzle with the rest of the cinnamon mixture and swirl again.
  5. Bake the Cheesecake: Bake in the preheated oven for 50-60 minutes or until the center is set. Turn off the oven and leave the cheesecake inside with the door slightly open for another hour. Remove from the oven and allow to cool completely at room temperature. Refrigerate for at least 4 hours or overnight.
