Description

A classic Shepherd’s Pie recipe with a delicious meat filling and creamy mashed potatoes on top.


Ingredients

  • 3 large potatoes (1 1/2 to 2 pounds, peeled and quartered)
  • 4 tablespoons butter (for mashed potatoes)
  • 1 teaspoon salt (plus more to taste)
  • 4 tablespoons butter (for cooking)
  • 1 medium onion (chopped, about 1 1/2 cups)
  • 12 cups mixed vegetables (such as diced carrots, corn, or peas)
  • 1 1/2 pounds ground round beef
  • 1/2 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • pepper (and/or other seasonings of choice, to taste)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place the peeled and quartered potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  3. While potatoes are cooking, melt 4 tablespoons butter in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add the mixed vegetables to the skillet and cook for 3-4 minutes until slightly tender.
  5. Add the ground beef to the skillet. Cook, breaking up the meat with a spoon, until browned and cooked through, about 8-10 minutes.
  6. Stir in the beef broth and Worcestershire sauce. Season with pepper and additional salt to taste. Simmer for 5 minutes until the mixture thickens slightly.
  7. Drain the cooked potatoes and return to the pot. Add 4 tablespoons butter and 1 teaspoon salt. Mash until smooth and creamy.
  8. Transfer the meat mixture to a baking dish. Spread the mashed potatoes evenly over the top.
  9. Bake for 20-25 minutes until the top is golden and the filling is bubbling. Let rest for 5 minutes before serving.

  • This dish is perfect for using up leftover vegetables.
