Instructions

  1. Prepare the Batter: In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  2. Prepare the Chocolate Filling: If using chocolate spread, scoop small dollops onto a parchment-lined baking sheet and freeze until firm, about 30 minutes. If using chocolate chips, you can skip this step.
  3. Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour a tablespoon of batter onto the skillet, add a piece of frozen chocolate spread or a few chocolate chips in the center, and top with another tablespoon of batter to cover the chocolate. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, another 1-2 minutes.
