A refreshing slaw with a delicious dressing.
Ingredients

- 6 cups shredded green cabbage
- 1 cup shredded purple cabbage
- 1 cup cherry tomatoes, halved
- ½ cup red onion, thinly sliced
- ½ cup fresh cilantro, chopped
- 1 cup shredded cheddar or Colby-Jack cheese
- 2 cups Fritos corn chips, lightly crushed
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tbsp lime juice
- 1 tbsp apple cider vinegar
- 1 tsp sugar or honey
- ½ tsp garlic powder
- ½ tsp chili powder
- Salt and black pepper, to taste
Instructions
- In a large bowl, combine green cabbage, purple cabbage, tomatoes, red onion, cilantro, and cheese.
- In a separate bowl, whisk together all dressing ingredients until smooth.
- Pour dressing over slaw and toss until evenly coated.
- Fold in crushed Fritos just before serving.
- Chill briefly if desired, then serve.
