Description

A refreshing slaw with a delicious dressing.


Ingredients

  • 6 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ½ cup fresh cilantro, chopped
  • 1 cup shredded cheddar or Colby-Jack cheese
  • 2 cups Fritos corn chips, lightly crushed
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar or honey
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine green cabbage, purple cabbage, tomatoes, red onion, cilantro, and cheese.
  2. In a separate bowl, whisk together all dressing ingredients until smooth.
  3. Pour dressing over slaw and toss until evenly coated.
  4. Fold in crushed Fritos just before serving.
  5. Chill briefly if desired, then serve.
